  • 1/4 cup fresh basil, chopped
  • 1/2 cup part-skim ricotta cheese
  • 1/2 cup shredded part-skim mozzarella

Instructions

  1. Cook the Protein: In a large pot, heat olive oil over medium heat. Add ground turkey or chicken, cook until browned, and set aside.
  2. Sauté Veggies: In the same pot, add chopped onion, garlic, bell pepper, and zucchini. Sauté for 5-7 minutes until softened.
  3. Add Broth and Tomatoes: Add broth, crushed tomatoes, diced tomatoes, and marinara sauce to the pot. Season with Italian seasoning, dried basil, salt, and pepper.
  4. Simmer: Bring the soup to a gentle simmer and add the browned turkey or chicken back into the pot. Let it cook for 10-15 minutes to meld flavors.
  5. Cook the Noodles: Add the broken lasagna noodles and cook until tender (about 10 minutes).
  6. Serve: Remove from heat, and stir in fresh basil. Ladle soup into bowls and top with a dollop of ricotta and a sprinkle of mozzarella.
